Cake care guide

Which coating to choose, how to transport the cake, where to keep it and when to take it out of the fridge.

Cake coating

Cream cheese

Ingredients

  • cream
  • powdered sugar
  • cream cheese

A delicate, airy cream with a light texture and a mild taste. It is less dense and reacts faster to the surrounding temperature.

Ganache

Ingredients

  • chocolate
  • butter

A denser, more stable coating with a rich chocolate flavour. It holds its shape better and copes with warmth better than cream cheese.

Transport

  • Carry the cake on a flat surface (ideally on the car floor or in the boot).
  • Avoid sharp turns and sudden braking.
  • In warm weather, it is best to switch on the car air conditioning.
  • Do not keep the cake out of the fridge for long.

Storage

+2…+6 °Cin the fridge

  • Keep the cake in the fridge at +2…+6 °C.
  • Keep it in its box or a closed container so it does not absorb other smells or dry out.

Before serving

To make the cake as tasty as possible and let its texture open up:

serving

Cream cheese coatingtake out of the fridge 30 minutes before serving

Ganache coatingtake out 1–2 hours before serving

Why it matters

In the cold

the cream and sponge become denser and less aromatic.

At room temperature
  • cream cheese becomes soft and tender;
  • ganache softens slightly, revealing its chocolate flavour and becoming more pliable.
